I’m sorry but I cannot think about Thanksgiving without thinking about Adam Sandler’s Thanksgiving song going through my head. I’ve had that song stuck in my head for two decades now! If you have never heard the song be sure and look it up.

With Thanksgiving quickly approaching I’ve put together a roundup of super simple Thanksgiving side dishes. I opted for only simple ones because let’s face it the holidays are hectic, especially if you’re a mom.

My go-to recipe when it comes to making an easy side dish is roasted potato wedges. It’s a simple recipe and I always seem to have the ingredients on hand.

Roasted Potatoes

Roasted Potato Wedges


2 lbs potatoes (any type of potato works)

2 garlic cloves, pressed

1/8 cup olive oil

1 tsp rosemary

1 tsp thyme

1/2 tsp salt

1/4 tsp black pepper

Preheat the over to 450 degrees.

Cut up potatoes, however, you like.

Place potatoes in a baking dish and press the garlic over the potatoes. Sprinkle all the other ingredients over them.

Bake 45 minutes or until brown and tender.

Mandarin Orange Salad

This is another recipe my grandmother always made when we visited. It was never my favorite, but my kids can not get enough of it. For those that love mandarin oranges, this recipe will be a hit.

Mandarin Orange Salad Ingredients:
2 small cans mandarin oranges, drained
1 cup coconut
1 small sour cream
1/2 cup chopped pecans


Just mix it all together and enjoy it.

Easy Fruit Salad

Create your own fruit salad

It is easy to make a fruit salad that suits your unique tastes. I like to make a pistachio fruit salad that I grew up eating at my grandmother’s house. She named it Amy’s Fruit Salad because my cousin Amy loved it. It’s a great food for St. Patrick’s day because the pistachio pudding colors it green! It is a simple side dish to make and it is one of those recipes that easily allow substitutions. Take this recipe and customize it to make your own fruit salad based on what your family members enjoy eating.

Fruit Salad Ingredients:

2 16oz cans of fruit, drained (I use fruit cocktail, crushed pineapple)
1 package of instant pudding (I use pistachio instant pudding)
1 tub of cool whip
1/2 cup of nuts (optional, use the nuts you like, I use chopped pecans)
Stir together all the ingredients and chill.
Serve cold.
