Baking Time: 45 minutes
Total Time: 1 hour
Makes: 20 bars
Ingredients:
¾ C sweet cream butter (melted)
1 ½ C light brown sugar (packed)
1 ½ C sugar
3 large eggs
3 tsp pure vanilla extract
1 tsp ground cinnamon
¾ tsp salt
3 tsp baking powder
3 C all-purpose flour
3 C diced apples
1 C chopped pecans
11/2 Tbsp sugar
½ tsp ground cinnamon
Directions:
Preheat oven to 350 degrees
Prep a 9 x 13-inch baking dish with nonstick baking spray.
Line the baking dish with parchment paper.
Make sure that the parchment paper overhangs on the sides of the baking dish. Combine the 1 ½ tablespoons of sugar and ½ teaspoon of ground cinnamon in a small bowl. In a mixing bowl combine the melted butter, brown sugar, and 1 ½ cup of sugar. (Just beat until combined)
Add the eggs, vanilla, cinnamon, salt, and baking powder to the melted butter bowl. Beat to mix. (This will have a creamy texture.)
Add in the flour. Start with the electric mixer to combine but switch to using a large spoon or your hands to completely mix all of the ingredients. (Your batter will be extremely thick.) Add in the apples. Stir to mix in.
Add in the chopped pecans. Stir to mix in.
(You may want to use your hands to fully mix all of the ingredients.)
Scoop the batter in the prepared baking dish.
With an offset spatula even the top of the batter out.
Sprinkle the batter with the sugar/ cinnamon mixture.
Bake at 350 degrees for 40-45 minutes.
(Insert a toothpick in the center of the dish. If it comes out clean then it is done, if not then return it to the oven. )
Remove from the oven and allow to cool in the baking dish prior to cutting into bars.
