Apple Turkey Soup – Crockpot Recipe

Are you wondering what to do with all that leftover turkey?
I’ve tried many different ways to use up leftover turkey over the years. One year I used turkey instead in my spicy chicken spaghetti recipe and another year I used leftover turkey in my White Chicken Chili recipe.
This year my suggestion is to make some soup in your crockpot with it. It’s easy to make and oh-so good. Plus, you will use up other food items leftover from Thanksgiving like gravy, apples, corn, carrots, and onions.
Leftover Turkey Soup – Crockpot Recipe
Ingredients:
2 C apple juice
1 can chicken stock
½ C diced peeled apples
1 can peas, drained and rinsed
1 can sliced carrots, drained and rinsed
1 can corn, drained and rinsed
½ Spanish onion, diced
1/ 2 jar of turkey gravy
2 tsp ginger
salt and pepper to taste
2 C cooked turkey, shredded
1 package Rotteli pasta
Olive oil spray
Bread bowls
Directions:
Spray your crockpot with olive oil spray. Add the apple juice and chicken stock to the crockpot. Turn the crockpot on medium heat and continue to add the ingredients (except the pasta). Stir the ingredients to blend the ingredients together. Heat for 5 hours. Add the pasta, stirring to mix well and cook for an additional hour. Before serving the soup, spoon it into each bread bowl. (Or just a regular bowl and serve with some bread!)
