Appledoodle Cookies aka Apple Snickerdoodle Cookies
Have you ever heard of Appledoodle cookies? Yes, that’s a real thing. It’s a cross between an apple cookie and a snickerdoodle cookie. You will love them!
Apple Snickerdoodle Cookie Recipe (Appledoodles)

Makes: 3 dozen
Ingredients:
2 ½ C all-purpose flour
1 tsp cream of tartar
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 sticks unsalted butter
1 C sugar
½ C light brown sugar(packed)
2 large eggs
2 tsp pure vanilla extract
2 Gala apples (cored, peeled, and shredded)
½ C sugar
4 tsp cinnamon
Directions:
Preheat oven to 350 degrees.
Line a cookie sheet with a silicone mat. Set aside.
Add the flour, cream of tartar, baking soda, 2 teaspoons of cinnamon, and salt. Whisk to blend together. Set aside.
In a mixing bowl combine butter, light brown sugar and sugar, eggs, and vanilla. Use an electric mixer beat until creamy. Slowly add the dry mixture in the wet mixture.
Stir to mix all of the ingredients together. Set aside.
Put the shredded apples in the center of a kitchen towel. Squeeze the juice out of the shredded apples. Transfer the apples to another kitchen towel. Fold the towel in half placing the shredded apples in the center of the towel. Pat the excess juice out of the apples.
Add the apples to the batter. Stir to combine.
Add ½ cup of sugar and 4 teaspoons of cinnamon in a small bowl. Set aside. Use a small cookie scoop to measure out the cookies.
Roll each dough ball in the sugar/ cinnamon mixture.
Reroll this in a ball.
Set on the prepared cookie sheet.
Bake at 350 degrees for 11-12 minutes.
The cookie edges will be slightly browned and the center will be soft.
Allow the cookies to cool on the cookie sheet for 5 minutes.
Move them to a cooling rack to cool completely.
