Blueberry Brownies Recipe
These blueberry brownies with lemon icing are a little sweet with a touch of sour making them extra delicious.
Recently, I have decided to turn everything I can think of into brownies. Some have turned out much better than others! These happened to turn out great and you can pair them with blueberry ice cream, so here’s the recipe.
Blueberry Brownies Recipe
Ingredients:
1 C unsalted sweet cream butter, melted and cooled 2 tbsp canola oil
1 ¼ C sugar
1 C light brown sugar, packed
2 tsp pure vanilla extract
4 large eggs
1 C flour
1 C cocoa powder
¾ tsp kosher salt
½ tsp baking powder
1 C semi-sweet chocolate chips
½ C Flour
2 C fresh blueberries
Lemon Icing:
¾ C powdered sugar
1 large lemon, juiced
Directions:
Preheat oven to 350 and spay a 9×13 baking pan with pam baking spray Using a medium bow, melt the butter
Using a large bowl, whisk together the melted butter, oil, and sugars Whisk in the eggs and 2 tsp of vanilla extract
Using a large bowl whisk together the flour, cocoa, salt and baking powder Gradually whisk in the dry ingredients into the wet
Fold in the chocolate chips
Toss the fresh blueberries in the ½ C flour
Fold in the fresh blueberries into the brownie batter
Pour the batter into the baking dish
Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean Allow to cool completely
Using a medium bowl, whisk the powdered sugar and lemon juice until combined Pour into the piping bag and cut the tip off
Drizzle over the brownies before cutting
