So let’s get baking…Chocolate Banana Coffee CakeI wanted to make the kids a cake tonight, but I didn’t have the complete ingredients for any cake recipes, so I just made one up. It was surprisingly good.

I am always looking for ways to use up bananas before they go bad, so I am pleased to have another recipe that can use them up other than banana bread.

Chocolate Banana Coffee Cake Recipe

Ingredients:
2 bananas
1 pkg yellow cake mix
1 package chocolate instant pudding
4 eggs
1/2 cup oil
1/2 cup graham cracker crumbs
1/3 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg

Directions:

In a bowl, mix bananas with mixer. Add cake mix, pudding, eggs, oil and mix for 5 minutes.

In a separate bowl, mix graham crackers, brown sugar, cinnamon, and nutmeg.

Pour half the cake mixture into a bundt pan, then pour the sugar mixture on top. Cover with the remaining cake mixture and back for 60 minutes at 325 degrees.
