I came home from Spain with a craving for more Spanish food. We visited Madrid and Barcelona and spent a lot of time eating. You may remember my post on Tacos in Madrid and my obsession with the Tacos Al Pastors I had in Spain! That’s how I found this cookbook. I was on the hunt for recipes for some specific things we ate while in Spain and after thoroughly searching I found this awesome cookbook!

Today’s recipe was inspired by this cookbook. I’ve tweaked it and made it easier from the original recipe. I know it’s Cuban, not Spanish, but oh well, it’s awesome regardless. I haven’t been to Cuba, so I can’t speak for whether or not it’s authentic Cuban style food or not. It’s quite possible that this a Cuban with a Spanish twist.

Cuban Style Rice with Fried Eggs and Bananas

Ingredients

3 garlic cloves

4 oz olive oil

1.5 Cups Rice

1 TBSP butter

4 bananas

4 eggs (or however many you want to eat)

1/2 tsp salt

1/2 tsp paprika

1 can diced tomatoes with basil, garlic, and oregano

Directions

Heat up the can of diced tomatoes with basil, garlic, paprika, and oregano.

Cook the rice according to the directions of the rice you choose. Do cook it with two of the garlic cloves.

Heat half the olive oil in a pan and fry 1 chopped glove of garlic. Stir in the rice.

Slice bananas in half longways and fry in butter.

Add remaining oil to the butter and fry eggs.

Serve the rice with the diced tomatoes along with a fried banana and fried egg.
