Fireworks Cupcakes
It’s almost time for the 4th of July which means it’s almost party time! Well, at least in the United States that’s what it means. I like to make themed food for special holidays and for the 4th of July I make these red, white, and blue cupcakes. They are easy to make, taste great, and they are festive.
Fireworks Cupcakes
Makes 24 cupcakes
Ingredients
1 box of french vanilla cake mix
3 eggs
1/2 C (1 stick) of softened unsalted sweet cream butter
1 C whole milk
1TBSP pure vanilla bean paste
Cupcake liners
Cupcake pan
3 small ice cream scoops
Directions for cupcakes
Preheat oven to 350 and line cupcake pan with the liners
In a medium bowl, combine the cake mix, butter, milk, and vanilla bean paste and mix until combined
Divide the batter into 3 bowls, leaving 1 of them white.
Add a few drops of the red food coloring into 1 bowl and mix.
Add a few a few more drops until you get a slightly darker shade.
Add drops of the blue food coloring into the second bowl and mix
Add a few more drops and mix until you get the shade you want.
Using a 1 ice cream scoop for each color, alternate the batter by dropping in a small amount of the red first then blue then white.
Bake in the oven for about 21 minutes
Pull out and place on the side to cool
Frosting Ingredients
1 C unsalted sweet cream butter, softened
2 1/2 C powder sugar
1 tsp vanilla
3-5 TBSP heavy whipping cream
Blue and red food coloring
3 bowls
3 medium star tip and 3 pastry bags
Directions
Using a standing mixer, combine all ingredients except the food coloring into the bowl and mix on medium speed
If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream
Mix until you see creamy stiff peaks
Separate the frosting into three bowls
Add the red food dye into one bowl
Add the blue food dye into the second bowl
Leave the third bowl white
Take one of each of the piping bags and fill it with a color
Directions for decorating
Take a cooled cupcake and pipe on a large circle of the red frosting.
Take the white frosting and pipe on a smaller circle
Take the blue frosting and pipe on a even smaller circle
Using the white frosting, pipe on just a small amount on the top.
