Pumpkin Honey Bun Cake
One of my favorite things to do is use a cake box mix to create a recipe. This particular recipe uses a yellow cake mix combined with pumpkin puree and other fun ingredients to make a delicious pumpkin honey bun cake.
Pumpkin Honey Bun Cake Recipe
Prep Time: 20 minutes
Baking Time: 40 minutes
Total Time: 60 minutes
Makes: 12 servings
Ingredients:
Cake:
1 box (15.25 oz) super moist yellow cake mix
½ C canola oil
4 large eggs
½ C regular sour cream
¾ C pumpkin puree
2 ½ tsp pumpkin pie spice
¾ C light brown sugar (packed)
½ C pecans (chopped)
Glaze:
1 C powdered sugar
2 Tbsp whole milk
1 tsp pure vanilla extract
Directions:
Preheat oven to 350 degrees.
Prep 13 x 9 inch baking dish with non-stick baking spray.
Cake:
Combine the light brown sugar and chopped pecans in a small bowl. Set aside. In a large mixing bowl to add the cake mix, oil, eggs, sour cream, pumpkin puree, and pumpkin pie spice.
Beat with an electric mixer on medium speed for 2 minutes. (Just enough to combine the ingredients.)
Scoop two cups of the cake batter in the bottom of the prepared baking dish. Sprinkle the brown sugar/pecan mixture over the cake batter.
Cover this with the remaining cake batter.
Use an offset spatula to even the top of the cake. Spread it to all four corners and sides of the baking dish.
Bake at 350 degrees for 35-40 minutes.
(Test by inserting a toothpick in the center of the cake to make sure the cake is completely baked.)
Remove from the oven and place on a cooling rack to cool.
Glaze:
Add the powdered sugar, milk, and vanilla in a medium bowl. Use a whisk to combine.
Pour the glaze over the cake while it is still warm.
Use a rubber spatula to spread the glaze over the entire cake. Set aside the glazed cake to cool completely before cutting it into pieces to serve.
