Pumpkin Hummus

Happy Fall Y’all! Sadly, it’s officially fall season out here in rainy dreary Portland. To kick off the fall, I made the kids a pumpkin-inspired treat, Pumpkin Hummus. It is super easy to make and cheap.
Pumpkin Hummus
Ingredients:
1 ½ tsp minced garlic
1 can chickpeas (15oz)
1 ½ C pumpkin puree
½ tsp salt
1 tsp ground cumin
1 lemon, juiced
1 TBSP extra virgin olive oil
Directions:
Using a food processor, add your drained and rinsed chickpeas, pumpkin puree, salt, cumin, lemon juice, and extra virgin olive oil.
Process until completely blended.
Serve immediately or cover and store in the refrigerator.
