Red Velvet pancakes are so good and they make a perfect Valentine’s day breakfast or a birthday breakfast for someone that loves anything red velvet.

After having them at Cinnamon’s restaurant in Hawaii on the island of Oahu, I had to figure out how to make them. I looked up a lot of recipes but wanted to be able to use the cake mix. I could make them from scratch, but it’s more work. Here’s the recipe I’ve come up with after a few tries. I will admit they are not as fluffy as Cinnamon’s, but they are still really good.

 

Red Velvet Pancakes

Ingredients:

1 1/2 cups flour
2/3 cup red velvet cake mix
1 TBS sugar
3/4 tsp baking powder
3/4 tsp baking soda
1/8 tsp salt
2 eggs
1 tsp vanilla extract
1 1/2 – 2 1/4 cups of milk

Directions:

Mix together flour, cake mix, baking powder, baking soda, and salt in a bowl. Add 1 1/2 cups of milk, eggs, and vanilla extract to the dry ingredients. You want the batter to be thinner than regular cake batter, because they cook too thick if not. If you think the batter is too thick, add the rest of the milk up to another 3/4 cups.

Preheat electric grill to 325 degrees. Be sure to grease the grill. I use coconut oil. Pour about 1/4 cups of batter onto grill and let cook until the pancakes are bubbly on top. Flip and cook for 1-2 more minutes.

Vanilla Glaze (optional)

1 cup powdered sugar
1/2 TBS milk
1/2 tsp vanilla extract
 
Mix all the ingredients and drizzle over pancakes. With this glaze you probably will not need syrup. If you do not want to do a vanilla glaze use regular syrup instead.
 
Additional fun toppings:
Syrup
Sprinkles
Whip cream
 
Now if I can figure out how to make Cinnamon’s Guava Pancakes!
