Texas Caviar Recipe
Texas Caviar (also commonly referred to as cowboy caviar depending on where you are from) is one of my most favorite appetizers. Although apparently some people serves this and call in a black-eye pea salad. This is one of my go-to recipes when I am hosting a party, especially if I have a lot of people to feed. It’s easy to make and tastes great. I serve it with tortilla chips like a dip.
I have two versions of this that I make. A super simple version and a jazzed-up version.
Simple Texas Caviar Recipe
Texas Caviar ingredients:
16 oz corn
16 oz black-eye peas
16 oz black beans
1 bunch, chopped green onions
3 tomatoes, chopped
1 green bell pepper, chopped
Italian Dressing
Texas Caviar directions:
Mix together and add Italian dressing to taste.
Chill two hours before serving.
Serve with tortilla chips.
Jazzed-Up Texas Caviar Recipe

Total Time: 10 min
Ingredients:
1 Red Bell Pepper, diced
1 Yellow Bell Pepper, diced
1 Orange Bell Pepper, diced
½ Red Onion, diced
3 cans ( 15oz )Black Eyed Peas
¼ tsp garlic powder
1 tsp Salt
1 tsp ground pepper
1 tsp cajun spice
1 tsp dried parsley
½ cup Olive Oil
½ cup White wine Vinegar
½ cup Apple Cider
Directions:
Prep all vegetables and place in a medium-sized bowl.
Drain and rinse the black-eyed peas and add to the vegetables, toss to combine.
In a small bowl add the olive oil, white wine vinegar, apple cider, garlic powder, salt, pepper, dried parsley. And cajun spice.
Whisk to combine.
Pour the dressing over the black-eyed pea mixture, toss to combine.
Chill for 1 hour
