Unicorn Sugar Cookie Bars
Do you have a kid that loves unicorns?
Eden loves unicorns, so when we bake, we bake unicorn-themed desserts!
We’ve been home since school started, so we’ve had time to bake for the first time in months. We might have gone a little overboard on these, but the results were awesome and delicious. You could use a confetti cake mix instead of making the batter if you need to save some time.
Unicorn Sugar Cookie Bars
Ingredients:
1 bag of sugar cookie mix
1/2 C of unsalted sweet cream butter, softened
1 large egg, room temperature
1 deep baking dish lined with parchment paper
1/2 container of shiny tiny pearl sprinkles
Directions:
Preheat oven to 350
In a large bowl, mix the cookie mix, butter, egg and sprinkles
Spray the parchment paper with cooking spray
Place the cookie dough into the baking dish and pat down until the cookie fills the bottom of the pan.
Sprinkle some more pearls onto the top of the dough.
Bake for 35-40 minutes or until golden brown
Set aside to cool while you make the frosting
Frosting Ingredients:
1 C unsalted sweet cream butter, softened
2 1/2 C powder sugar
1 tsp vanilla
3-5 TBSP heavy whipping cream
2-4 drops of pink food coloring
1 medium star tip and a piping bag
Purple, green and light blue edible pearl sprinkles
Star confetti sprinkles
Directions:
Using a standing mixer, combine all ingredients into the bowl and mix on medium speed
If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream
Mix until you see creamy stiff peaks
Add the pink food coloring
Scoop frosting into the piping bag
Directions:
Pipe on the frosting so that it covers the whole top of the cookie.
Sprinkle some star sprinkles as well as the tiny edible pearl sprinkles, all over the top
Repeat step with the edible pearls
Let cookie bars sit for 20 minutes until you cut the bars and serve.
